Oyster Mushroom Shepherd’s Pie
Ingredients:
Oyster mushrooms – 200 g, chopped
Onion – 1 medium, chopped.
Carrot – 1 small, diced
Green peas (Matar) – ½ cup
Tomato paste – 2 tbsp
Worcestershire sauce (or soy sauce for veg) – 1 tbsp
Potato (Aloo) – 3 large, boiled & mashed
Butter – 2 tbsp (or vegan butter)
Milk – ¼ cup (or almond milk for vegan)
Black pepper – ½ tsp
Salt – to taste
Olive oil – 1 tbsp
Method:
Heat oil, sauté onion, carrot, mushrooms till soft. Add peas, tomato paste, Worcestershire sauce, salt, and pepper. Cook till the mixture is thick.
Mash potatoes with butter, milk, salt, and pepper.
In a baking dish, layer the mushroom mix → potato mash on top.
Bake at 200°C for 20 minutes till a golden crust forms. Serve hot.
