Oyster Mushroom Shepherd’s Pie

Ingredients:

  • Oyster mushrooms – 200 g, chopped

  • Onion – 1 medium, chopped.

  • Carrot – 1 small, diced

  • Green peas (Matar) – ½ cup

  • Tomato paste – 2 tbsp

  • Worcestershire sauce (or soy sauce for veg) – 1 tbsp

  • Potato (Aloo) – 3 large, boiled & mashed

  • Butter – 2 tbsp (or vegan butter)

  • Milk – ¼ cup (or almond milk for vegan)

  • Black pepper – ½ tsp

  • Salt – to taste

  • Olive oil – 1 tbsp

Method:

  • Heat oil, sauté onion, carrot, mushrooms till soft. Add peas, tomato paste, Worcestershire sauce, salt, and pepper. Cook till the mixture is thick.

  • Mash potatoes with butter, milk, salt, and pepper.

  • In a baking dish, layer the mushroom mix → potato mash on top.

  • Bake at 200°C for 20 minutes till a golden crust forms. Serve hot.
