Oyster Mushroom Quesadillas (Indian twist)
Ingredients:
Oyster mushrooms – 200 g, sliced
Onion – 1 small, sliced
Capsicum (Shimla mirch) – 1, sliced
Garlic – 3 cloves, minced
Green chili – 1, chopped
Cumin powder – ½ tsp
Red chili flakes – ½ tsp
Cheese – ½ cup (vegan cheese for vegan)
Tortillas / Rotis – 4
Oil – 1 tbsp
Method:
Heat oil, sauté garlic, onion, capsicum, mushrooms until soft. Add cumin, chili flakes, salt.
Place mix on tortilla, sprinkle cheese, cover with another tortilla.
Toast on tawa until golden and cheese melts. Cut into wedges, serve with salsa or chutney.
