Oyster Mushroom Quesadillas (Indian twist)

Ingredients:

  • Oyster mushrooms – 200 g, sliced

  • Onion – 1 small, sliced

  • Capsicum (Shimla mirch) – 1, sliced

  • Garlic – 3 cloves, minced

  • Green chili – 1, chopped

  • Cumin powder – ½ tsp

  • Red chili flakes – ½ tsp

  • Cheese – ½ cup (vegan cheese for vegan)

  • Tortillas / Rotis – 4

  • Oil – 1 tbsp

Method:

  1. Heat oil, sauté garlic, onion, capsicum, mushrooms until soft. Add cumin, chili flakes, salt.

  2. Place mix on tortilla, sprinkle cheese, cover with another tortilla.

  3. Toast on tawa until golden and cheese melts. Cut into wedges, serve with salsa or chutney.
