Oyster Mushroom Pot Pie

Ingredients:

  • Oyster mushrooms – 200 g, sliced

  • Onion – 1 medium, diced

  • Garlic – 4 cloves, minced

  • Carrot – ½ cup, diced

  • Green peas – ½ cup

  • Butter – 2 tbsp (use vegan butter for vegan)

  • Flour – 2 tbsp

  • Milk – 1 cup (almond/soy milk for vegan)

  • Black pepper – ½ tsp

  • Salt – to taste

  • Puff pastry sheets – 2

  • (Optional non-veg) – add shredded chicken or ham

Method:

  • Heat the butter, then sauté the onion, garlic, carrot, and mushrooms until they are soft.

  • Add flour, stir well, slowly whisk in milk → make creamy sauce.

  • Add peas, salt, pepper, and optional chicken/ham.

  • Transfer the mixture into a baking dish, cover with puff pastry.

  • Bake at 200°C for 20–25 mins till golden. Serve hot as a hearty meal.
