Mediterranean Oyster Mushroom Salad
Ingredients:
Oyster mushrooms – 150g, roasted in olive oil
Cherry tomatoes – ½ cup, halved
Cucumber – ½ cup, diced
Black olives – ¼ cup
Feta cheese – ¼ cup (skip or use vegan feta for vegan)
Fresh parsley – 2 tbsp
Dressing: Olive oil 2 tbsp + Red wine vinegar 1 tbsp + Oregano ½ tsp + Salt & pepper
Method:
Roast mushrooms till golden.
Mix with cucumber, tomatoes, olives, and parsley.
Drizzle with dressing. Crumble feta on top (or vegan feta).
