Mediterranean Oyster Mushroom Salad

Ingredients:

  • Oyster mushrooms – 150g, roasted in olive oil

  • Cherry tomatoes – ½ cup, halved

  • Cucumber – ½ cup, diced

  • Black olives – ¼ cup

  • Feta cheese – ¼ cup (skip or use vegan feta for vegan)

  • Fresh parsley – 2 tbsp

  • Dressing: Olive oil 2 tbsp + Red wine vinegar 1 tbsp + Oregano ½ tsp + Salt & pepper

Method:

  • Roast mushrooms till golden.

  • Mix with cucumber, tomatoes, olives, and parsley.

  • Drizzle with dressing. Crumble feta on top (or vegan feta).
