Creamy Oyster Mushroom Pasta Salad

Ingredients:

  • Cooked pasta – 1 cup (penne, fusilli, macaroni)

  • Oyster mushrooms – 150g, sautéed in olive oil

  • Bell peppers – ½ cup, diced

  • Sweet corn – ½ cup

  • Mayonnaise – 3 tbsp (use vegan mayo for vegan)

  • Black pepper – ½ tsp

  • Salt – to taste

  • Lemon juice – 1 tsp

Method:

  • Cook pasta, drain, and cool.

  • Toss mushrooms, pasta, bell peppers, corn in a bowl.

  • Mix mayo, lemon juice, salt, and pepper into a creamy dressing. Combine and chill before serving.
