Creamy Oyster Mushroom Pasta Salad
Ingredients:
Cooked pasta – 1 cup (penne, fusilli, macaroni)
Oyster mushrooms – 150g, sautéed in olive oil
Bell peppers – ½ cup, diced
Sweet corn – ½ cup
Mayonnaise – 3 tbsp (use vegan mayo for vegan)
Black pepper – ½ tsp
Salt – to taste
Lemon juice – 1 tsp
Method:
Cook pasta, drain, and cool.
Toss mushrooms, pasta, bell peppers, corn in a bowl.
Mix mayo, lemon juice, salt, and pepper into a creamy dressing. Combine and chill before serving.
