Aam aur Oyster Mushroom Salad (Mango Oyster Mushroom Salad)
Ingredients:
Oyster mushrooms – 200g, sautéed until golden
Raw mango – ½ cup, julienned (or ripe mango for sweet version)
Carrot – ½ cup, julienned
Roasted peanuts – 2 tbsp
Fresh mint – 1 tbsp, chopped
Green chili – 1, chopped (optional)
Dressing: Lemon juice 2 tbsp + Olive oil 1 tbsp + Honey 1 tsp (use jaggery syrup or maple syrup for vegan) + Salt
Method:
Cook mushrooms and cool slightly.
Mix with raw mango, carrot, mint, and peanuts.
Toss in dressing. Serve crunchy and tangy.
